Lavaux owes its splendor to the retreat of the Rhone glacier and to the Cistercian monks who, in the 12th century, built miles of walls and terraces still carefully maintained by today’s winemakers. These craftsmen produce excellent wines, matured by the so called “three suns”: direct sun light, the reflection off Lake Geneva and the heat restored by the walls during the night. Visiting epicureans taste with delight chasselas, pinot noir and other grape varieties labeled by three controlled designation of origin (AOC): Lavaux, D\u00e9zaley and Calamin. Before being recognized by UNESCO in 2007, this harmony between man and nature already seduced contemplative walkers and inspired artists.<\/p>\n
